For the past few months, at the newly opened Shiki Omakase in Vienna, they have been demonstrating the happiness that can be created through craftsmanship combined with the very finest ingredients.

Omakase means trusting the chef and leaving it up to them to create the usually exclusive menu. With these three culinary craftsmen, there is no reason for distrust. We are talking about three masters who have raised the culinary bar in Austria yet another notch.

Sake sommelier Dallinger studied Japanese studies and worked at Steirereck and Ikarus. With his sake pairings, he demonstrates a harmony that one so often longs to find.

This also answers the question of whether to order wine or sake as an accompaniment. Although the wine list features some truly fine selections, the sakes play in a league of their own and broaden the flavor horizons of every bon vivant.
