BACHL’S REVIEW OF “SHIKI OMAKASE” IN VIENNA

In the small, intimate “Shiki Omakase” in central Vienna, only eight guests can enjoy their meal seated directly around the kitchen counter.

In mid-2025, conductor and “Shiki” proprietor Joji Hattori opened a boutique and sake bar not far from the main restaurant. Behind it, an intimate new concept was quietly being finalized.

Omakase refers to the idea that, as a guest, you have little more to do than take your seat, order your drinks, and wait for the culinary experience to unfold. In Japan, securing a reservation at the finest restaurants of this kind often requires personal references.

Here, a maximum of eight guests can reserve a place in the ceremonial sequence of dishes with a €150 deposit, with the total price coming to €298. Alternatively, there is a luxury version costing €448, featuring caviar and A5-grade Wagyu beef.

It is well known that in Japan, the coast is never far away and that Tokyo’s fish market is considered a benchmark when it comes to seafood.
