Shiki founder Joji Hattori has discovered a new favorite in the caviar from “I am Caviar.” Founded in Greece in 1997, the company stands for naturally produced caviar, processed with only a minimal amount of salt, free from additional preservatives, and deliberately packaged in glass — preserving the purity of its aromatic profile.
The sturgeon stocks consist of representatives of some of the oldest species, Diamond Sturgeon and Beluga, raised in Greek coastal rivers under conditions that closely resemble their natural habitat. Hattori particularly appreciates the mild style, which makes the caviar an ideal pairing partner for other fish varieties. Its buttery, nutty aromas also harmonize beautifully with scrambled eggs or beef tartare — dishes that can easily be recreated at home.
