Now he has gone one step further and opened \u201cShiki Omakase\u201d just a few steps away. \u201cOmakase\u201d means <strong data-start=\"291\" data-end=\"318\">\u201cI leave it up to you,\u201d<\/strong> referring to the chef. The small back room of the \u201cShiki Boutique\u201d seats only eight guests, and all the nigiri sushi and sashimi are prepared <strong data-start=\"461\" data-end=\"476\">\u00e0 la minute<\/strong> right in front of the guests.<\/p>\n<h3 data-section-id=\"v5rxb7\" data-start=\"508\" data-end=\"541\"><span role=\"text\"><strong data-start=\"512\" data-end=\"541\">What is the evening like?<\/strong><\/span><\/h3>\n<p data-start=\"543\" data-end=\"995\">Dinner begins at <strong data-start=\"560\" data-end=\"573\">6:30 p.m.<\/strong>, while lunch starts at <strong data-start=\"597\" data-end=\"611\">12:30 p.m.<\/strong> Head chef <strong data-start=\"622\" data-end=\"637\">Alois Trend<\/strong> and sushi masters <strong data-start=\"656\" data-end=\"693\">Hiroki Takahashi and Ruben Gorcea<\/strong> explain the current sequence of courses. Then it begins. Each course is better than the last. Even watching the fish being cut is fascinating. This has nothing to do with what has traditionally been considered sushi in Vienna. The difference is enormous\u2014no, <strong data-start=\"952\" data-end=\"994\">it\u2019s like comparing different galaxies<\/strong>.<\/p>\n<h3 data-section-id=\"1rnjjnx\" data-start=\"997\" data-end=\"1062\"><span role=\"text\"><strong data-start=\"1001\" data-end=\"1062\">How much do the menus cost, and are they worth the money?<\/strong><\/span><\/h3>\n<p data-start=\"1064\" data-end=\"1274\">The evening menu, with around <strong data-start=\"1094\" data-end=\"1120\">20 courses, costs \u20ac298<\/strong>, while the lunch menu costs <strong data-start=\"1149\" data-end=\"1157\">\u20ac198<\/strong>. That is a lot of money, but it is worth every cent, because the focus here is on precious, top-quality ingredients.<\/p>\n<p data-start=\"1276\" data-end=\"1523\">Take <strong data-start=\"1281\" data-end=\"1294\">\u201cO-Toro,\u201d<\/strong> for example. It is a prized part of the <strong data-start=\"1335\" data-end=\"1351\">bluefin tuna<\/strong>, incredibly delicious and meltingly tender on the tongue\u2014but correspondingly expensive. Even the rice served with it is completely different: firm, with a delicate flavor.<\/p>\n<p data-start=\"1525\" data-end=\"1764\">The creations should be eaten quickly, because they are at their best when absolutely fresh. Here, <strong data-start=\"1624\" data-end=\"1642\">minutes matter<\/strong>, as does the almost ruthless perfection of Japanese culinary craftsmanship. And that kind of perfection comes at a price.<\/p>\n<h3 data-section-id=\"sc2s0b\" data-start=\"1766\" data-end=\"1803\"><span role=\"text\"><strong data-start=\"1770\" data-end=\"1803\">What do you drink at Omakase?<\/strong><\/span><\/h3>\n<p data-start=\"1805\" data-end=\"2121\" data-is-last-node=\"\" data-is-only-node=\"\"><strong data-start=\"1805\" data-end=\"1842\">Wine is not really the focus here<\/strong> (although the impressive wine cellar of the main restaurant is available). Instead, guests should put themselves in the hands of <strong data-start=\"1972\" data-end=\"2006\">sake sommelier Peter Dallinger<\/strong>, a passionate sake expert who oversees a sake collection that\u2014as with the entire restaurant\u2014is <strong data-start=\"2102\" data-end=\"2120\">second to
